If you brand Emily (and she isn't so loyal that she has to be ordered to leave) Tisha will offer to swap herself for Emily's freedom. If you do this you do have the option to change your mind after you brand Tisha, and keep them both. But they obviously don't like it.

From what I've seen, the slave chosen is determined by a combination of factors, length of time owned, number of times fucked, level etc.
It looks like it tries to pick the one you have interacted with the most.

I just tried to bang my starting slave a lot and leveled her up to the same level as my combat team, so that she would be the one who got picked, instead of one of the named characters. It seemed to work pretty well.

This page says you get her first gallery unlock by swapping Tisha for Emily when Tisha demands that you release Emily, but I have never seen that option. I've had Emily have high loyalty, and it gives me the same options of release/give food/demand compensation. But that compensation is never swapping Tisha for Emily, it's just a blowjob.
